This vegetarian slice is simple and easy to put together, and is exceptionally full of flavour and goodness, with beetroot, zucchini, parsley and spinach. Eaten hot or cold, we’re pretty sure you’ll enjoy it.
Vegetarian Slice Ingredients
1 tblsp Dijon mustard
Half a lemon
Half a bunch of chopped parsley
Half a bunch of spinach
- Grate 1 beetroot and 3 zucchinis and put in a colander, with a pinch of salt, to drain. It’s best to do this separately to prevent the beetroot from staining the zucchini. After draining, put them on a separate piece of kitchen paper to absorb the remaining water.
- In another bowl, mix 3 eggs, 1 tblsp of Dijon mustard, the juice from 1/2 lemon, 1/2 bunch of chopped parsley, 1/2 bunch spinach and 500 grams of Ricotta cheese. Mix well.
- Season and pour in a baking trail. Bake 40-50 min on 160c until golden (preferably).
